Charring Peppers for an Elevated Salsa

Salsa is more than just a dip—it's a canvas for bold flavors, fresh ingredients, and creativity. Here at The Hood Garden, we grow a variety of sweet and hot peppers that we love using in all kinds of recipes, but one of our absolute favorite ways to use them is in salsa. Charring your peppers is a simple technique that takes your salsa game to the next level. It adds depth, smokiness, and complexity to the flavor, turning a good salsa into an unforgettable one.

Why Char Your Peppers?

Charring peppers brings out their natural sweetness while adding a layer of smoky, earthy goodness. The heat intensifies their flavors and makes the skins easier to remove, giving your salsa a smoother texture. Whether you’re working with jalapeños for some heat, bell peppers for their sweetness, or one of our special Hood Garden blends, this technique is a game-changer.

How to Char Peppers

There are three main ways to char peppers: over an open flame, under a broiler, or in a hot skillet. Here's how to do it:

  1. Over an Open Flame (Best for Gas Stoves or Grills):
    Place the peppers directly over the flame, turning them with tongs until the skin is evenly blackened. This method gives the most intense smoky flavor.

  2. Under the Broiler:
    Lay your peppers on a baking sheet and place them under the broiler, turning them every few minutes. This method works well if you’re charring a larger batch.

  3. In a Hot Skillet or Pan:
    Heat a cast-iron skillet or heavy pan over high heat. Add the peppers and turn them occasionally until the skin is blistered and charred. This is a great indoor option that still gives excellent results.

Once the peppers are charred, place them in a bowl and cover with a lid or plastic wrap. Let them steam for about 10 minutes. This helps loosen the skin, making it easier to peel. After steaming, peel off the charred skin (don’t worry if a few bits remain—it adds character!) and remove the seeds if you prefer a milder salsa.

Crafting Your Elevated Salsa

Here’s a simple recipe to get you started with your charred peppers:

Ingredients:

  • 3-4 charred peppers (mix of sweet and hot, depending on your spice tolerance)
  • 2 medium tomatoes, diced
  • 1 small red onion, finely chopped
  • 2 cloves of garlic, minced
  • Juice of 1 lime
  • Handful of fresh cilantro, chopped
  • Salt to taste

Instructions:

  1. Dice the charred peppers and combine them with the tomatoes, onion, garlic, and cilantro in a bowl.
  2. Add lime juice and a generous pinch of salt.
  3. Mix everything together, taste, and adjust seasoning as needed.
  4. Serve immediately or let it chill in the fridge for an hour to let the flavors meld.

Pairing and Enjoying
